Super easy chicken chili

sharing one of my favorite meals to make as the weather starts getting cooler

Super Easy Chicken Chili


Ingredients
2 tablespoons olive oil
1 onion, chopped
1 1/2 (14 ounce) cans chicken broth
2 (15.5 ounce) cans great Northern beans
1 (4 ounce) can chopped green chile peppers
1 roasted chicken, bones and skin removed, meat torn into bite-size pieces
3 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons cayenne pepper
1 (8 ounce) container sour cream
1 (8 ounce) package shredded Monterey Jack cheese
Directions
Heat olive oil in a large saucepan over medium heat. Stir in onions, and cook until softened and translucent, about 3 minutes. Pour in chicken broth, great Northern beans, chopped chiles, and torn chicken. Season with cumin, chili powder, and cayenne pepper. Increase heat to medium-high to bring to a boil, then reduce heat to medium-low, and simmer for 10 minutes.
Stir in sour cream and simmer for 5 minutes. To serve, ladle into bowls and sprinkle with Monterey Jack cheese.

    Oh I am late, I'm late for a very important date. I am late for tea with you, you see.

    That glass of tea, no syrupy sweet for me, but lemon for sure. I also have to try a cookie, or two or three, I mean they are sugar free. You know me? Don't you sweet pea.

    I love this chili recipe. The weather here is going to have to change a LOT before I can be encouraged to eat chili though. Still having triple digit days here in the desert. I look forward to cooler weather, I hope soon?

    I am going to try that sugar free peanut butter cookie recipe though. I am always looking for a treat for me. Thank you sweet friend for thinking of me.

    I hope you are well. I have had a couple of bad days this week. Still suffering with a lot of muscle spasms in my neck when I strain to push out sounds to talk.
