christmas fruit cake


I wanted to share a favorte cake of mine at christmas time.such a easy recipe too follow ..with the end result being the most moist yummy dessert ever.enjoy everyone and have a happy holiday


Dark Christmas Fruitcake
4 cups raisins
1 cup candied cherries - halved
1 cup candied pineapple
1 cup diced candied mixed fruit
1 cup pecan halves
1 cup thinly sliced almonds
2 cups flour
1/2 tsp. baking soda
1 cup brown sugar
6 eggs - separated
1 cup vegetable shortening
1 1/2 tsp. cinnamon
1 tsp nutmeg
1 1/2 tsp. ground cloves
1/2 square unsweetened baking chocolate(melted)
1/4 cup lemon juice
1/4 cup orange juicePreparation - Thoroughly grease a 4" x 10" tube cake pan or 2 large loaf pans pans, or 3 medium size loaf pans. Line the bottom and sides with aluminum foil. Lightly spray the foil with nonstick cooking spray; set aside. In a large bowl, combine the fruit and nuts. Toss the mixture with 1 cup flour to coat. In a second bowl, sift the remaining flour with the baking soda and spices. In a very large bowl, at medium speed, beat the shortening and sugar together until light and fluffy. Add the egg yolks, one at a time, beating well afer each addition. Add the melted chocolate & mix well. At low speed, alternately beat in the flour/spice mixture and the fruit juices. In a separate bowl, with clean beaters, beat the egg whites until stiff. Fold the beaten egg whites into the batter. Add the fruit and nut mixture and stir in by hand until all the ingredients are well mixed. Turn the batter into the prepared pan (1 tube pan or 2 large loaf pans or 3 small loaf pans). Bake in a preheated oven at 300ยบ - in a tube cake pan for 2 hours and 20 minutes; in 2 large loaf pans for 1 hr and 45 minutes; in 3 small loaf pans for 1-1/2 hours. Cool completely in the pan, on a wire racke. Remove the cooled cake from the pan and wrap it well.

apple fritters

i hope you will enjoy these apple fritters ,they are sod good for Breakfast or as an evening snack with tea.enjoy friends
Apple Fritter

Fritter:
1 cup all purpose flour
1/4 cup sugar
3/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1/3 cup milk
1 egg
1 cup chopped apple
Glaze:
2 cups powdered sugar
1 1/2 tablespoons milk
Directions: Combine flour, sugar, salt, baking powder, cinnamon. Stir in milk and egg until just combined. Fold in apple. Pour oil into skillet so that it is approximately 1 1/2 deep. Heat oil on high. Oil is ready when dough floats to top. Carefully add dough to oil in heaping teaspoons. Cook until brown, about 2 minutes, then flip. Cook another 1-2 minutes, until both sides are browned. Transfer briefly to paper towels to absorb excess oil, then transfer to cooling rack. Make glaze by stirring milk and powdered sugar together in a small bowl. Drizzle over apple fritters. Wait approximately 3 minutes for glaze to harden, then flip fritters and drizzle glaze over the other side. Best served warm. Enjoy :)

This evening i found this yummy scone recipe,I'm going to make them for breakfast tomorrow.they look so good,perfect with a nice cup of tea ..

Cinnamon Raisin Scones

Ingredients2 cups all-purpose flour 1/3 cup sugar 1 tablespoon baking powder 1 teaspoon cinnamon 1/4 teaspoon salt 1/2 cup butter or margarine 2/3 cup milk 1 beaten egg 1 teaspoon vanilla extract 1 cup Sun-Maid Natural Raisins
Directions:
HEAT oven to 400 F.COMBINE flour, sugar, baking powder, cinnamon and salt.Using pastry blender or fork, CUT IN butter until mixture resembles coarse crumbs.COMBINE milk, egg and vanilla.ADD to flour mixture; stir until dry ingredients are moistened.STIR in raisins.With floured hands, SHAPE dough into 8-inch round on ungreased cookie sheet.SPRINKLE with additional sugar, if desired.CUT dough into 8 wedges; slightly separate wedges.BAKE at 400 F for 15 to 20 minutes. Serve warm.
